Macaroni and Cheese

Ingredients
- 1 lb penne pasta, cooked al dente and cooled
- 1/2 lb cooked ham, diced
- 4 C milk, warmed
- 4 T unsalted butter
- 6 T unbleached all-purpose flour
- 1 t paprika (optional)
- 4 oz jarlsberg cheese (grated)
- 8 oz mozzarella cheese (grated)
- 4 oz sharp cheddar cheese
- 4 oz Ricotta cheese
- 1 oz parmesan or romano cheese (grated)
- 4 oz sour cream
- Italian bread crumbs
Instructions
- Melt the butter and whisk in the flour to create a roux. Whisk in the milk, then bring to a boil whisking continuously, until the sauce thickens. Add the sour cream and paprika, and season to taste.
- Mix the COLD pasta with the ham and all the cheese except the parmesan, then mix in the milk mixture. Pour into a buttered baking dish, top with the bread crumbs and the parmesan.
- Bake at 350 for 20 to 25 minutes. Finally, broil for 1 to 2 minutes to brown the top.
- Plate and serve.
